“À Lagareiro Riberalves” style Codfish
200g of small new potatoes
olive oil q.s.
1 small sprig of collard greens
To prepare a ” à Lagareiro” style Riberalves Codfish, see here the full recipe and bon appétit!
Roast the potatoes with olive oil and salt in a preheated oven at 200°, for approx. 30 min.
Arrange the defrosted and dried with absorbent paper codfish loins in a baking dish with olive oil and 4 crushed garlic cloves, drizzle with a little of olive oil and halfway through cooking the potatoes, place them in the middle of the oven and bake for 15 to 20 min. aprox. (moving the potatoes to the bottom rack of the oven).
At the end, remove the potatoes from the oven, give them a light tap and add them to the codfish loins. Brown 3 garlic cloves in 2 dl olive oil.
Drizzle everything with olive oil and garlic and serve with sautéed collard greens. The “à Lagareiro” style Riberalves codfish is ready!
