Codfish Bowl

Ingredients

3 tablespoons of cooked couscous
1/2 tablespoon of chopped red pepper
1/2 tablespoon of chopped red onion
1 chopped garlic clove
1 dessert spoon of olive oil
1/2 Riberalves cod loin
1/2 courgette in slices
q.b. thyme
q.b. parsley
1 tablespoon of raw peanuts
1 tablespoon of peanut butter
1 teaspoon of olive oil
1 teaspoon of lemon juice

Preparation

Cut the frozen codfish into small cubes.

In a non-stick frying pan, with a drizzle of olive oil and salt, add the cauliflower and cook for about 5 minutes. Add the chopped chives and leave to cool.

In a bowl, make a bed with the cauliflower rice and add the codfish, the soybeans, diced avocado and corn.

Sprinkle with sesame seeds and chives. Season with soy sauce to taste.
