Codfish Canapé

Ingredients

250 g of deep-frozen shredded codfish Riberalves
300 g of loaf bread without crust
40 g of flour
6 tomatoes
3.5 dl of milk
1 drizzle of oil
1 tablespoon full of margarine
1 bay leaf
Lemon peel zest q.s.
Nutmeg q.s.
Thyme q.s.
Salt and pepper q.s.

Preparation

Heat the oven to 180ºC. Cut the slices of bread into rounds with a round cutter, arrange on a baking tray and place in the oven until toasted.

Place the shredded codfish in a pan, add the milk, bay leaf, a little nutmeg and pepper and cook. Remove, place in a colander, allow to cool and reserve the milk. Then mince the codfish. Set aside.

Melt the margarine in a pan, add the flour and stir well until it is dissolved and begins to take on a brownish tone. Remove from the heat and pour in the milk little by little, stirring until it is well incorporated and the sauce is thick. Then add the cod, stir well, add some thyme leaves and adjust the seasoning.

Cut the tomatoes into segments, place on a baking tray, season with a pinch of salt and pepper, drizzle with olive oil and bake in the oven until roasted. Place a piece of tomato and some of the cod preparation on the toast and serve.
