Minho Style Codfish

Ingredients

800 g de postas de bacalhau tradicional demolhado ultracongelado Riberalves
1 kg de batatas
3 cebolas
4 dentes de alho
2 dl de azeite
Pimentos morrones q.b.
Azeitonas q.b.
Pimentão-doce q.b.
Salsa picada q.b.
Sal e pimenta q.b.
Farinha para passar

Preparation

Defrost the cod fillets, then dry them well and sprinkle with a little salt and pepper.

Heat the olive oil in a frying pan. Dip the codfish fillets in flour, add them to the frying pan and fry until golden brown on both sides. Then drain them well and place them on a serving dish.

Peel and wash the onions and garlic cloves, cut the onions into half-moons and chop the garlic. Drain half the oil from frying the codfish and sauté the onions and garlic. Arrange on top of the cod.

Peel and wash the potatoes, cut into rounds and fry. Remove from the heat and arrange around the codfish. Sprinkle with a little sweet pepper and chopped parsley. Place strips of red peppers and olives on top and serve to taste.
