200g carolino rice
Extra Virgin Olive Oil
2 cloves garlic
200 ml dry white wine
1 sauce of cabbage spikes or turnip sprouts
1 bay leaf
Salt and Pepper qb
To start preparing a delicious rice with codfish tongues, heat the stock in a pan and set the tongues aside.
In another pan, boil the Turnip Greens / Kale Spikes after preparation. Once boiled, set aside in cold water.
In another pan, sauté 2 sliced garlic cloves and the finely chopped onion. Add the bay leaf and the dried tomatoes, both sliced.
Simmer over medium heat for about 5 minutes and add the rice.
Let the rice cook for another 5 min and add the white wine. Wait for the white wine to evaporate and add 3 measures of stock for each measure of rice.
Cut the turnip greens in julienne strips and the cheeks lengthways. 2 minutes before turning off the heat, add the tongues and the turnip greens.
Salt and Pepper rectify.
Before serving the Rice with codfish Tongues, wrap well and pour a drizzle of olive oil already on the plate.
