Viva Portugal Codfish (Hooray Portugal Codfish)

Ingredients

4 small loins of deep-frozen dessalted Riberalves codfish
4 ripe tomatoes
4 chopped garlic cloves
1 red pepper
Olive oil, q.s.
2 onions
1 bunch of parsley
1 sprig of basil
1 cup of fresh or frozen spinach
1 tablespoon of parmesan cheese
1 cup of cream
1 tablespoon of butter
Butter, q.s.
1 tablespoon of flour
2 scoops of grated parmesan cheese
1 cup of mashed potato
1 saffron tube
Nutmeg
Salt and pepper

Preparation

Viva Portugal Codfish. A special recipe to celebrate a country that has codfish in its gastronomic identity. See the full recipe here!

Boil the codfish loins and set them aside.

Cut the tomatoes (peeled and seeded) and the pepper. Drain them with olive oil and half the chopped garlic; liquefy them in a blender. Reduce it in the heat and add a spoonful of Parmesan cheese and a spoonful of cream. Adjust the seasoning.

Chop the onions, parsley, basil and spinach, soften them in olive oil and the rest of the chopped garlic, in the mixing bowl, liquefy them with the rest of the cream. Melt a tablespoon of butter and a tablespoon of flour, stir, add the contents of the blender jar, flavour with nutmeg, a tablespoon of Parmesan cheese and adjust the seasoning.

Brown the codfish in a knob of butter, serve one (half) portion covered in red sauce, another (half) with green sauce, and place a spoonful of saffron-coloured mashed potato between them. The Viva Portugal Codfish is ready!

Play the National Anthem, serve, enjoy.
